Hollandaise Sauce A la Anders
One morning when the whole clan was up here at our home on Cortes Island, and the request was in for Eggs Benny, I realized we did not have any of the ready mix packages for Hollandaise Sauce.
Well, time to invent something quick and simple. This is a really easy and super tasty recipe.
Here are the ingredients:
- 1 cup or 240 ml of Hellman's Mayonnaise
- 300 ml of half and half (half milk half whipping cream)
- Juice of half a small lemon
- 3-4 green onions, chopped. You can also use chives.
- 1 tbs of butter
- ½ tsp of turmeric
- Salt, to taste
- Pepper, to taste
- Pinch of sugar
In a sauce pan under medium heat melt the butter and add the chopped green onions. Saute for about a minute.
Now add the remaining ingredients whisk together all the ingredients, bring to almost a boil and then reduce to low heat and simmer if needed. That's it!
Serve with Eggs Benedict, poached Salmon, or over steamed asparagus. The sauce should have a nice creamy taste with the lemon flavour coming through.
