Sourdough Pancakes
I have to admit I do not like pancakes much. However, Donna (thanks, Donna) gave me a link to a recipe that looked really good: Sourdough Pancakes. They are delicious. Just add some Canadian Maple Syrup. Yum!
Here is my version of the recipe.
- ½ cup of warm water
- ½ cup of plain yogurt
- 50 grams of sourdough starter
- 1 egg
- 1 Tbsp of Avocado oil
- 1.5 Tbsp of sugar
- ¾ tsp of yeast
- ¾ tsp of salt
- 165 grams of flour
Mix all the ingredients except the flour using a whisk in a medium-sized bowl. I prefer using a spiral whisk. Once smooth, add the flour and mix or beat until it is smooth and free of lumps.
Scrape down the inside of the bowl with a spatula, cover with plastic wrap, and set aside in a warm place. Let rest for 2 hours.
After two hours, it will be nice and bubbly. Do not stir; scope out the dough into a buttered frying pan.
Leftover, keep covered in the fridge.
