Left Over Pork Tenderloin


So you have some left over pork tender loin in the fridge. Here is an easy way to make a light lunch or appetizer.

The ingredients are as follows:
  • Left over pork tenderloin
  • Wasa crips (hard) bread, or use regular bread, but it's better with hard bread.
  • Mayonnaise
  • Chutney
  • Olives, or anything else pickled.

Spread the mayonnaise on the hard bread, then follow with a thin layer of chutney. Slice the pork tenderloin thin and put on top of it all. Serve with a few olives on the side. It is delicious.

Wine Pairing and Recommendations:

Serve with a crisp chilled glass of Pinot Gris like Tinhor Creek Pinot Gris. Do not serve to cold, just chilled a bit.
