Cornflake Taters

Cornflake Taters Recipe


This is a great tasting and easy to make recipe. These tasty taters can be eaten as an appetizer, lunch, dinner or even for breakfast. This recipe is for four people are as follows.

Ingredients:
  • 6 medium size potatoes
  • 2 eggs
  • 1/4 tsp salt
  • 1/4 tsp fresh ground pepper
  • 3 cups of Cornflakes

Preheat oven to 400F or 205 C. Peal the potatoes and keep in a bowl of water not to discolour.

Beat the eggs in a flat bottom bowl, mix in the salt and pepper and continue beating until well mixed and frothy.

Cut off a 2ft (60 cm) piece of wax paper, put cornflakes on one end and fold over.

With a roller pin (even a wine bottle will work) roll and crush the cornflakes.

Transfer to a dinner plate. Slice the potatoes in 1/4 inch (6-7 mm) slices. Dry them with a towel.

Now dip the potatoes in the egg and bread in the corn flakes and put on a cookie sheet.

Bake for 40 min, turning over after 20 min.

Serve with your choice of meat, hot dogs goes great.

You can also just eat them by themselves as a snack and dip in your favourite sauce or use my Mayonnaise Relish Sauce.

If you have kids or grand kids around the house, they love to dip them in ketchup.

Wine Pairing and Recommendation:


For potatoes..... Well, how about just a Wine Spritzer.

In a tall glass, add some ice cubes, fill the glass half full with your favourite white wine, like a Pinot Grigio or a Gevertztraminer.

Top up with San Pellegrino or your favourite sparkling water. If you like garnish with a thin slice of orange.
