Here is an easy appetizer for you to make and is guaranteed to be a hit at your next party.

You can make this recipe ahead of time and then just warm it up (it is best warm).

This recipe makes a big batch. Split in three for a small crowd.

The ingredients for this recipe are:
  • 3 cans (14 oz or 398 ml) of canned artichokes in water.
  • 3 cans (8 oz or 227 ml ) of sliced water chestnuts, also canned in water.
  • 12 cloves of garlic
  • 3 cups or 709 ml of freshly grated Parmigiano-Reggiano (Italian for Parmesan) cheese.
  • 3 cups or 709 ml of Mayonnaise

Drain the artichokes using a colander and chop them up and transfer to a mixing bowl. Drain the water chestnuts, add to bowl

Add all ingredients and transfer to a large oven proof dish or two medium sized ones. Bake at 400 F or 200 C for 30 minutes and then turn down to 350 F or 175 C for another 15 minutes. If you have two smaller dishes it will cook a bit faster. If it starts to brown too much on the top, turn the heat down somewhat.

Serve warm on crackers or sliced baguette. Depending on the size of your party, you can devide this recipe into 3 bowls for 4 - 6 people.

Wine Pairing and Recommendations:

Anything goes. I like a nice Crisp Pinot Gris.

Kiss the Cook,

Anders
