Green Tomato Relish
I first had this relish back in the mid 80's when I had a ranch in Saskatchewan, it is just fantastic. Goes great with, sausage, pork and chicken. It takes a bit of work, but it is not really that hard to make.Ingredients are as follows:
- 6 cups of shredded cucumber
- 4 cups of shredded green tomatoes
- 4 cups of shredded carrots
- 3 cups of shredded onions
- 1 liter of white sugar
- 875 ml of white vinegar
- 2 tbs of pickling spices tied in cheesecloth
- 1 tbs of pickling salt
- 1 tsp of white pepper
- ½ - ¾ cup of cornstarch
Boil all the ingredients except the cornstarch for about 10 minutes, dissolve the cornstarch in a small amount of water then stir it in to the relish and bring to a boil. At this time you can discard the pickling spice. Once you have the desired consistency, pour into sterilized jars and seal.
