Carrot Ginger Soup

Yummy Carrot Ginger Soup


This soup is just right for a cold grey day. With the ginger coming through strong it warms your heart and soul.

Recipe ingredients:


  • 8-10 large carrots, peeled and chopped
  • 4-5 tbsp ginger, peeled and chopped very fine
  • 1 large onion chopped
  • 2 ribs of celery, peeled
  • 2 tbsp of butter
  • 1 large potato, peeled
  • 1 tbsp of turmeric, in powder form
  • 1 cube of chicken or vegetable bullion
  • 4 cups of water
  • Salt to taste
  • Pepper to taste

In a large saucepan over medium heat melt the butter and add the onions and celery. Saute for 2-3 minutes, stirring frequently. 

Add the water and bullion. Bring to a boil, then turn down to a simmer. 

Add the carrots, ginger, potato and turmeric. Simmer for 1-2 hours stirring every 15 minutes or so. Add salt and pepper to taste.

Using a hand blender puree all the ingredients to make a smooth soup.

The Soup should have a fairly strong taste from the ginger. Add some parsley, some seeds and a dollop of sour cream for decoration and flavour.
