Best Ever Asparagus & Jumbo Shrimp Salad
Asparagus and jumbo shrimp salad |

This dish is really easy to make and looks and tastes fantastic.
Asparagus is full of vitamins, high in antioxidants and loaded with folate which helps with the production of white and red blood cells.
Shrimp is also loaded with many health benefits even has some cancer-fighting properties
Ingredients:
- 10-14 spear of asparagus4 jumbo shrimp, shell removed, deveined and cooked
- 1 tsp of salt
- Balsamic Reduction (optional)
- Mayonnaise (optional)
- Salt to taste
- White pepper to taste
In a large saucepan filled ⅓ full with water and 1 tsp of salt, blanch the asparagus for about 2-3 minutes. Do this over high heat.
Once you can penetrate the spears fairly easy with a fork, remove them and cool in cold water for a few minutes.
Once the asparagus is cold, remove from the water and slice each spear on an angle into 3 pieces and stack on two salad plates.
Hook the two shrimp together and set beside the stack of asparagus.
I like this dish with a bit of cracked salt and pepper on top. You can add some mayonnaise or balsamic reduction if you prefer.
