Seafood Stirfry
Seafood Stir Fry |
Cooking and preparation time, 40 minutes
This is a great recipe that is loaded with nutrients and it is a bit time consuming but well worth the effort.
You can pick whatever seafood you have in the freezer and if you can get it fresh, good for you, go for it.
Ingredients:
- 12 Jumbo shrimp, cooked, peeled with tail on and deveined
- 20 small bay scallops
- ½ a leek, sliced thin
- 5 large cloves of garlic, minced
- 2 tbsp of fresh ginger, minced
- 2 red peppers, seeded and sliced
- 1 cup or 120 ml of broccoli florets
- 8-10 asparagus spears, trimmed, peeled and sliced in three
- 1 bundle of instant noodles, cooked and drained
- 4 tbsp of butter or canola oil or a combination of both

Add the bay scallops and cook for about 4 minutes. Do not overcook these little jewels, they turn into rubber. Once cooked, remove from pan and set aside.
Take the remaining butter from the small frying pan and add it to a large frying pan plus 2 more tbsp of butter. Turn up to medium heat and melt the butter. Add the remaining garlic, ginger and leek. Cook for 3-4 minutes then add the asparagus and the broccoli florets. Cook another 3-4 minutes and then add the red pepper and cook another 2-3 minutes. At this point, all your veggies should be cooked but still crisp. Add the scallops and the shrimp. Give it a good stir to get it mixed up then add the noodles and mix another 2 minutes. You're done!
Serve in a bowl of some kind.
