Sole and Macadamia Nut Recipe.
Macadamia Crusted Sole |
I really like this with Sole or Red Snapper.
This recipe is for 2 - 3 people depending the size of the fillets.
Ingredients then are:
- 3 tbs of butter
- 1 tbs of olive oil
- 4 Fillets of fish
- ¼ Cup of "Half & Half" or you can use milk.
- One hand full of finely chopped Macadamia nuts
- ¼ tsp salt
- ¼ tsp Pepper
- ¼ tsp Curry (optional)
- ¼ tsp Paprika (optional)
Mix the nuts and the spices and coat the fish with the macadamia nut mix and add to frying pan. Fry 2-3 minutes on each side. Fish cooks very fast and especially if you have some smaller fillets of Sole.
Serve with steamed broccoli and carrots.
Wine Pairing and Recommendations:
Try a Chardonnay, Pinot Blanc, Pinot Gris, White Zinfandel or a Gewürztraminer from the Alsace.
